As Thanksgiving approaches, you can appreciate with gratitude this corncucopia of good nutrition news.

  • Eat dark meat without guilt. Skinless turkey and chicken thighs may be even better for you than chicken and turkey breasts at thanksgiving. You can go whole hog on pork tenderloin, and lean flank steak is a lean meat lovers' delight.

  • Vinegar and olive oil delivers an anti-aging shot to your salad and to your health, especially for women. Try balsamic vinegar and olive oil. Infuse your dressing with herbs such as savory, rosemary, thyme, basil, or even anise seed.

  • You can serve commercial peanut butter, speaking of oils, to your kids for those PB & J lunches without feeling like the "bad mom." Although we still like Laura Scudder's butters, commercial peanut butter won't doom your child to heart disease.

  • How about those scrambled eggs? The Incredible Edible Egg is a good egg again, full of necessary nutrition. That sail, cholesterolaholics need to watch their egg intake and be aware of what else is in their diet. But if you're eating lean meat and cutting back cholesterol, you can break your eggs and have your omelette.

  • With sales of organic food in the United States projected at $13 billion in 2003, the Chinese, who believe food is medicine, have created a bumper crop. Unlike the US, the majority (70%) of China's 1.3 billion population are farmers. Hot tip: Organic blueberries, soybeans, corn and kidney beans from China are a must-have.
